Meet this week’s Featured Fellow, Molly Owens!
Molly Owens is an Environmental Fellow and has created the project Power Up with Plants. During Power Up with Plants, she will teach cooking classes to veterans and their families. The classes will cover fundamental topics such as:
- Education on the health and environmental benefits of plant-based meals
- How to improve their diet while on a budget
- Purchasing seasonal foods
- The importance of family meal-time
Power Up with Plants will incorporate Molly’s love of cooking with her passion for helping veterans. Molly sticks to a mostly plant-based diet, and she loves cooking Mediterranean food the most.
Molly is currently a graduate student at the University of Pittsburgh School of Health and Rehabilitation Sciences, studying Nutrition and Dietetics. She received her bachelor’s degree in Dietetics from Virginia Tech, where she stills mentors undergraduate students in the same major.
Molly is from New Jersey, and although she says she is a “Jersey Girl through and through,” she loves exploring Pittsburgh and all the city has to offer. You can find her at local farmers’ markets finding fresh produce to incorporate into Power Up with Plants!
During her time in high school and college, Molly has always found a way to be active in her community in order to serve others. In high school, she was always volunteering in her community, but when she started college she noticed that she was not helping the community as much a she wanted. So, when she joined the Tri-Delta sorority at Virginia Tech, she served on the philanthropy committee. While on the philanthropy committee, she fundraised for and worked with children at St. Jude’s Hospital.
Molly’s hobbies include a passion for dance, as well as cooking. Recently, Molly got accepted to be a writer for the food publication “Spoon University.” From blogging about food to trying new recipes, Molly has found a way a great way to use her passions to serve those in the community with her project.
